Roast beef is actually quite easy to do in the crockpot. Buy a roast that doesn't have a whole lot of fat on it and that will fit into your crockpot.
Put the frozen roast into the crockpot and add two cups of water. Cover and cook on low for 8 hours. Remove the roast from the crockpot and let sit for about 20 minutes.
In the meantime, use the liquid from the crockpot to make gravy. Mix 6 tablespoons flour with 1 cup cold water until a liquid paste forms and the flour is completely mixed. Add the paste to the liquid in the crockpot and boil until thickened.
I don't add salt to my roast before I cook it. It seems to make the meat tougher. Instead of water, you can use one of the following liquids to the frozen beef:
- 1 can beer
- 2 cups ginger ale
- 2 cups root beer
- 2 cups water plus 2 OXO cubes, dissolved
- 2 cups water plus 1 pkg. dry onion soup mix
For fresh beef, the cooking time will be reduced by at least an hour.
